Homemade Red Lentil Bread Rolls – Flourless, Fiber-Rich & Delicious!
Updated: Oct 16
Who says you need traditional flour to make bread?
If you're looking for a simple alternative to conventional bread, these homemade red lentil rolls are worth trying!
Made with red lentils, flaxseed, and psyllium husk, they're naturally flourless, packed with plant-based ingredients, and a great way to add more fiber to your meals.
I love finding creative ways to use whole foods in everyday recipes. Healthy eating doesn't have to be complicated, and sometimes the simplest ingredients can surprise you!

Ingredients
Makes 4 rolls
1 cup (200 g) dry red lentils (or combination with brown lentils)
⅓ cup (75 ml) water
¼ cup (20 g) ground flaxseed
2¼ tablespoons (20 g) psyllium husk powder, or ¼ cup whole psyllium husk
½ teaspoon salt
1 teaspoon baking powder
¼ teaspoon baking soda
¾ tablespoon lemon juice, lime juice, or apple cider vinegar
Optional: Your favorite seeds for topping (sesame, pumpkin, or sunflower)
Instructions
Soak the lentils. Rinse the dry red lentils thoroughly in a sieve until the water runs clear. Transfer them to a large bowl, cover generously with water, and soak for at least 2 hours or overnight. Drain well.
Preheat the oven. Set your oven to 360°F (180°C) and line a baking sheet with parchment paper.
Prepare the dough. Add the soaked and drained lentils, ⅓ cup fresh water, ground flaxseed, psyllium husk, and salt to a food processor. Blend until a thick, sticky dough forms.
Add the leavening ingredients. Add the baking powder, baking soda, and lemon or lime juice (or apple cider vinegar). Pulse briefly until everything is combined.
Shape the rolls. With damp hands, divide the dough into 4 equal portions and shape into round rolls. Place them on the prepared baking sheet. Sprinkle or coat with your favorite seeds if desired.
Bake. Bake for 23–25 minutes, until the rolls are set and lightly golden.
Cool completely. Allow the rolls to cool before slicing or serving.
Enjoy!
A Few Helpful Tips
Soaking matters: One cup of dry lentils expands to approximately 2½ cups after soaking. Use the entire drained amount in the recipe.
Work quickly: Once you add the baking powder, baking soda, and acidic ingredient, the reaction begins. Shape your rolls and place them in the preheated oven within approximately 10 minutes.
Let them cool: Allowing the rolls to cool completely helps the texture set before slicing.
