Creamy Sweet Potato, Carrot & Ginger Soup
This is one of my favorite simple soups for fall - warm, creamy, nourishing, and made with just a handful of whole-food ingredients.
The sweetness of the sweet potatoes and carrots pairs beautifully with fresh ginger, while bone broth adds protein and creates a nourishing base. Organic coconut milk gives the soup its creamy texture without any dairy.
No complicated ingredients. No heavy cream. No flour. Just real food.
This soup is gluten-free and dairy-free, easy to make, and perfect for a cozy fall lunch or dinner.
Ingredients
3 medium sweet potatoes, peeled and chopped
2–3 carrots, peeled and chopped
Fresh ginger, peeled and chopped or grated, to taste
2–3 bay leaves
Bone broth, enough to cover the vegetables
A little sea salt, to taste
Organic coconut milk, to desired creaminess

Instructions
Add the chopped sweet potatoes, carrots, fresh ginger, bay leaves, bone broth, and a little salt to a large pot.
Bring to a boil, then reduce the heat and simmer until the sweet potatoes and carrots are completely soft.
Remove the bay leaves before blending. (Unless you love a little crunch:))
Using an immersion blender, blend everything directly in the pot until the soup is smooth and creamy.
Add organic coconut milk and blend or stir until you reach your desired consistency and creaminess.
Taste, add a little more salt if needed, and serve warm.
That’s it! Add pumpkin seeds or other seeds of your choice if you like! And of course a fresh sourdough bread is a must!
Simple Food Really Can Be This Good
This is exactly how I love to eat - simple, nourishing foods that don't require a long list of ingredients.
You get beautiful whole-food carbohydrates and fiber from the sweet potatoes and carrots, protein from the bone broth, the warming flavor of fresh ginger, and that wonderful creaminess from coconut milk.
And sometimes that's all you need.
Healthy eating doesn't have to mean complicated recipes or spending hours in the kitchen. A few good ingredients can make something absolutely delicious.
If you're looking for an easy soup to make this fall, save this one and give it a try.
Enjoy in love & health,
Sylvie
