Protein Matcha Pistachio Chia Pudding Recipe

The breakfast I've been looking forward to all week. It tastes like dessert for breakfast, but it's actually loaded with healthy fats, fiber, protein, and that subtle matcha kick. If you need something quick to prep for breakfast ( or a snack or a dessert ) next week - this is it!!
This Protein Matcha Pistachio Chia Pudding Recipe will keep you full and satisfied for hours!
You will need:
½ cup chia seeds
1 cup plain Greek yogurt
1½ cups milk of choice
½ cup shelled pistachios (raw, unsalted)
2 tsp matcha powder (ceremonial grade if you can)
3 tbsp maple syrup
1 tsp vanilla extract
1 scoop vanilla plant-based protein powder
Pinch of salt
In a blender: add milk, pistachios, matcha, maple syrup, vanilla, protein powder, and a pinch of salt. Blend until completely smooth and vibrant green.
In medium bowl: add Greek yogurt and pour in the blended matcha pistachio milk.
Whisk together until fully combined.
Stir in chia seeds and let sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 2–4 hours, or overnight, until thick and scoopable.
Scoop into bowls and finish with toppings of choice.
Store in the refrigerator for up to 5 days.
